Authentically Made Inauthentic Tacos
Last week I got the inside scoop on a new taco joint in town - Spitfire Tacos + Tequila located in Eagle, Idaho. I was able to join a few other local creators and get a taste of their menu, let me tell you, I am offically hooked!
First off, the food. Let's talk about the Carne Asada tacos. These are not your typical tacos, my friends. They pack in marinated carne asada steak, crispy cheese, guacamole, cilantro, onion, pickled fresno chiles, miso morita salsa, and cilantro tajin crema. All that wrapped up in a soft flour tortilla. I'm telling you, each bite was a party in my mouth.
Then there was the Birria Ramen Slow-cooked Beef. This dish is like a hug in a bowl, loaded with tender, slow-cooked beef, birria consommé, cabbage slaw, avocado, watermelon radish, cilantro, onion, and Maruchan ramen noodles. It was comfort food with a twist and I was all about it.
Of course, I couldn't leave without trying one of their agave-focused cocktails. I went for the Ensenada Blanco, and it was just as refreshing and complex as it sounds. This cocktail blends Botanist gin, orgeat, pineapple, lemon, and angostura bitters. It was the perfect drink to wash down my flavorful meal.
The best part? They're open seven days a week. You can get your taco fix from Sunday to Thursday, from 11 am to 10 pm. And for the night owls, they're open until midnight on Fridays and Saturdays. Plus, for all you early birds, they serve breakfast daily from 7 am to 11 am.
