Coa Cantina is officially open in Boise as of February 7th, and it’s exactly the kind of place you can pop into on a weeknight.

Your New Neighborhood Cantina
The space feels easy. Welcoming. The kind of restaurant where you walk in for tacos and enjoy “One more round?”
No reservations. Just show up.
They’re open daily from 11am to 10pm, making it perfect for lunch breaks, casual dinners, weekend meetups, or spontaneous plans.
The layout has been reimagined from its former walk up counter setup into a true cantina experience. There’s a bar with seating for eight to ten, a few TVs, a large community table for bigger groups, and smaller tables throughout. Total seating lands around 50 to 60 guests, which keeps it intimate but still lively.
And yes, there’s a salsa bar with homemade Coa salsas, pickled jalapeños, and radishes.
The Team Behind It
If the name Coa sounds familiar, it is. This concept comes from Torro Restaurant Group, the team behind Barbacoa, Coa del Mar, Coa de Jima, Ti Amo, and Nick’s Italian Ristorante.
But this one is special.
Coa Cantina is the result of three local restaurant owners collaborating: Dylan Cordry of Sushi Shack, Kasey Allen and Daniel Sell of The STIL, and Torro President Nikolai Castoro. It’s a true local effort, built by people who already know how to create spots Boise loves.
And there’s more coming. A fusion menu with sushi collaboration is planned for spring, bringing that signature Coa flair into a whole new direction.
What’s On the Menu?
Simple. Straightforward. Delicious.
You’ll find starters, street tacos, burritos, quesadillas, sides, drinks, and even a kids menu. It expands on the street taco concept with six to eight protein options including carne asada, carnitas, chicken, al pastor, shrimp, and a vegetarian option.
Pick your protein. Add it to tacos, burritos, or quesadillas. Easy.
It’s the kind of menu that lets you order quickly and get back to talking.

What I love most is the vibe. It feels like a true neighborhood cantina.

And I have a feeling this is about to become a lot of people’s new favorite spot.
